Frini Katsouna is the founder of ‘’Do it like a Cretan’’ cooking company, located in Chania, Crete.

Frini loves slow cooking in nature. She creates recipes with natural, local, and seasonal ingredients, and stands for Slow cooking preparation methods.

Her cooking techniques are influenced by her Grandmther`s recipes, a combination of Cretan and Cypriot cuisine combined with eastern flavours of Asia Minor.

Frini cooks since her early childhood, and her dream is ‘’to promote the Cretan Cuisine and to spread it all over the world”.

She organizes Slow cooking seminars and food testing events, in cooperation with local restaurants, or ‘’culinary cooking & sailing’’ courses, in Crete.

She promotes experiential learning and promotes the Cretan diet worldwide.

Fava with oregano, caramelized onion, and cherry tomatoes

A tasty fava dip enriched with the sweet flavor of caramelized onions and cherry tomatoes.

Ingredients for Fava

1 glass fava beans 
3 glasses of water 
1 small red onion, 1 bay leaf & Salt

Put all the ingredients in a pot and cook them slow, in low fire until the water is fully absorbed.

Ingredients for the caramelized onions

3 large red onions, sliced
100 ml olive oil
15 cherry tomatoes

4 tablespoons balsamic vinegar
1 leek, sliced
1/2 tbsp ground black pepper or lemon pepper

1 bay leaf
Sea salt

Cooking steps

1. Put the olive oil in a pan with the bay leaf, the lemon pepper, the onions and leek, and brown them in medium fire.

2. Turn fire in low and let them slowly cooked for 20 minutes.

3. Add cherry tomatoes and continue Slow cooking.

4. Just before onions and cherry tomatoes are ready, turn fire to medium and add balsamic vinegar and salt.

5. Cook for another 3 minutes. 

Serve fava, onions, and tomato on top and some lemon zest. Sprinkle with olive oil and oregano on top.
